Our mothers and grandmothers who came to this land of opportunity, brought with them their values, their faith and their rich cultural heritage. They learned to cook from their mothers and grandmothers, in the villages and cities of Greece. St. Katherine’s Philoptochos Society is now pleased to make these recipes available, in our Simply Greek Recipes Cookbook, to all who have enjoyed our food and would like to bring it to their own kitchens.

Recipes and Favorites: Our Featured Recipe
Koulourakia
1 c. (2 sticks) of butter, room temperature
1 c. shortening
2 c. sugar
4 eggs
1/4 c. orange juice
2 tsp. vanilla extract
1/4 tsp. baking soda
4 tsp. baking powder
7 c. sifted flour
1 egg beaten + 1 tsp. water
sesame seeds as needed
Preheat oven to 350 degrees. At high speed, cream shortening and butter until light and fluffy. Continue to beat and gradually add sugar. Beat at low speed and add eggs one at a time. Add orange juice with vanilla. Mix baking powder and baking soda, with 6 1/2 cups of flour. While beating at low speed, gradually add flour mixture. Add remaining 1/2 cup of four if needed, to make a soft, non-sticky (pliable) dough. Pinch off small pieces of dough and roll them into five inch strands. Fold them over into a rope, placing them one inch apart on a cookie sheet. Brush lightly with beaten egg and sprinkle with sesame seeds. Bake for 20 minutes or until lightly brown. While they are baking, shape the remaining dough and place on the next cookie sheet. Makes 3-4 dozen, depending on the size of the cookie twists.
